Tilapia Cakes


I designed these to be a lot like crab cakes. Enjoy this recipe.

5 tilapia filets, finely chopped
1 egg, beaten
1 cup Italian bread crumbs
1/2 cup almonds, ground fine
2 Tbs basil, fresh with stems off, finely chopped
1/4 cup parmesan, grated
1 tsp salt
1/2 tsp pepper, ground fresh
2 Tbs olive oil

In a medium sized bowl, mix tilapia and egg. Add bread crumbs, basil, and parmesan, almonds, salt and pepper. Mix well. Form about 1/4 cup of the mix to make a patty. Makes about 6 patties.

In a frying pan, add olive oil. Once the oil is hot, add patties. Cook 3 at a time. Cook about 4 minutes on each side or until brown.

Serve with coleslaw.
