Stuffed Acorn Squash


1 acorn squash
1/2 cup water
1/2 cup Italian bread crumbs
1/2 cup grated parmesan
1/4 tsp salt
fresh ground pepper
1/2 cup pine nuts
Pine nuts for topping
Grated parmesan for topping

In the microwave, put whole acorn squash in for one minute. Remove and
cut acorn squash in half. Put cut side down in a glass Pyrex. Add the 1/2 cup of water. Microwave for 9-10 minutes until soft.

Scoop out center and reserve shells. Put center into food processor. Add bread crumbs, parmesan, salt, pepper and pine nuts. Process ingredients until combined. Fill shells with stuffing. Top with parmesan and pine nuts. Bake at 350 degrees for 15 minutes.
