Macadamia Nut Crusted Salmon


This is my own little concoction and it’s really delicious. You can use it with any nut, but the macadamia nuts are the best with this. If you don’t like the calories of bread crumbs or the gluten, you can actually make this without them. It comes out just as nice. Just add another 1/2 cup of parmasan.

2-4 salmon fillets
1 cup macadamia nuts, roasted and salted
1/2 cup Italian seasoned bread crumbs
1/4 cup parmasan, grated (or 1/2 cup more if you’re not using bread crumbs)
4-5 leaves of fresh basil
1 tsp salt
1/2 tsp pepper
2 TBS olive oil

Preheat oven to 350 degrees.

In a food processor, combine nuts, bread crumbs, parmasan, basil, salt and pepper until finely ground.

Pour crust mixture into a shallow dish or plate. Press salmon on top of mixture to coat, then coat the other side. Repeat until all salmon pieces are coated.

In a non-stick pan, heat olive oil on medium-high heat. Brown salmon on both sides. Move salmon to a baking dish and bake for 15 minutes. If you have extra topping, you can add some more just before baking.
