Healthy Granola

This is my sugar-free granola. I know what you’re probably thinking, but don’t knock it until you try it. It might be the best granola you ever made. No one will ever guess its sugar-free. Its made with coconut palm sugar that smells like brown sugar. You’ll be addicted to it.

Trader Joes sells coconut oil and agave. Amazon or health food stores sell sugar-free shredded coconut and blonde coconut palm sugar (Sweet Tree).

6 cups old fashioned oats
1 cup pecans, chopped
1 cup almonds, chopped
1/2 cup shredded coconut, sugar-free
3/4 cup coconut palm sugar, blonde
1 tsp cinnamon
1/2 cup coconut oil
2/3 cup agave
1 tsp almond or vanilla extract

Preheat oven to 325 degrees. In an extra large bowl or pot, mix oats, nuts, coconut, sugar and cinnamon. On stove, heat coconut oil, agave and almond or vanilla extract. Heat until liquid. Pour over oat mixture. Combine until coated. Spread granola on 2 large cookie sheets 1/2″ thick. Bake for no longer than 15 minutes. It should be golden. Cool on stove top for 5 minutes. Turn mixture once to loosen from the bottom of the pan, then cool and store.
