Luxury Rosemary Tomato Potato Soup

You want to make your house smell great and provide a little comfort? Try this soup and you won’t be disappointed. It’s the perfect cure for the winter cold.

6 red potatoes, cut into small 1/2″ squares
2 TBS olive oil
1 TBS Rosemary, minced
6 cloves garlic, minced
2 28 oz. cans whole peeled plum tomatoes
1 TBS balsamic vinegar
1/4 cup heavy cream

Combine both cans of tomatoes in a blender or you can combine them in a deep bowl using an immersion blender. Set aside. Put potatoes in a glass bowl. Cover with a microwave safe plate. Par cook potatoes in microwave on high for 7 minutes. In a large pan, heat olive oil until hot. Add potatoes and cook on medium high until brown. Add rosemary and garlic and cook for about 2 minutes. Do not overcook garlic. Cook just until it smells really fragrant. Add tomato mixuture and balsamic vinegar. Stir. Cook on low for about 30 minutes. Stir in cream and warm for about 2 minutes. Serve.
